Owner. If you know what you’re doing, and hire good staff, they’ll practically run everything for you.
But, if you actually want to be an employee: I’d probably say wait staff. There’s obvious ups and downs to this (or any employee position) but the good thing being on the wait staff is that you walk out with cash every night. References :

Anywhere with lots of pedestiran traffic. Cafes are good near cinemas and shopping centres. Think about your demographic

Hostess is a fun position, you get to meet all the customers that way, other than that I wouldnt settle for less than management.
